SPECIAL MICROBIAL RENNET .
LIME
Preparation
- BOIL THE MILK OVER LOW HEAT, LEAVING THE MILK UNTILL LUKEWARM.
- DISSOLVE RENNET AND LIME IN A GLASS OF WATER THEN ADD TO THE MILK.
- MILK LEAVE IT FOR ONE HOURE , THER COVER THE MILK WELL IN SUITABLE TEMPERATURE FOR TWO HOURES.
- THEN OPEN THE COVER ON THE BLEND AND PUT IT FILTER AND COVER IT WITH LIGHT CLOTH AND KEEP IT FOR 4 HOURES.
- PUT SOME WEIGHT ON THE CHEESE AND KEEP IT FOR 6 HOURES.
